It is Bernard's conviction that it is possible to produce very great wines completely out of the hierarchy of the Terrois AOC Classification that makes the approach of the Domaine  totally different of what is usually practised in Burgundy.

Echalas: One stick by vine, we took off the metallic wire so that the sun and the wind have access all arround the vine

The work is manual and different for each vineyard, sometimes for each vine. No tractor on the Domaine

Late harvest so that the grapes are very mature, the stem brouwn the peel thick and the seed crunchy

The bottle is very heavy, dark and thick to preserve the wine from the light.

Very long cork ( 54mm X 24mm) for a long life of the wine.

Manual harvest

Harvest in very small cases to keep grapes in perfect condition till the cuverie
Only when it is neccessary the soil is laboured by a horse.

No work during winter, we have to wait march before beginning the pruning ...I can't explain it in english.

Very small production,  average only 4 to 7 barrels a year.
(This year much less)

Damy Exclusive strait grain oak barrels, renew every year ( 100% new barrel)

No intensive agriculture.
The vinyards are surrounded by fallow lands.
Total of the Domaine 4 hectares for only 2 hectares of vinyard.

My idea is that Bernard's enjoying his life and his work makes the vines feel good with him and willing to produce good wine
( this idea is totaly subjective ;-)))
